  2. 4 eggs.
  3. Three quarters of a cup of sugar.
  4. Three quarters of a cup of all-purpose flour.
  5. Three quarters of a teaspoon of baking powder.
  6. A quarter teaspoon of salt.
  7. 1 teaspoon of vanilla essence.

Ingredients For The Frosting.

  1. 1 and a half cups of heavy cream.
  2. A quarter cup of instant powdered chocolate drink.
  3. A quarter cup of sifted, unsweetened cocoa.

Method:

  • Preheat the oven to 350 degrees.
  • Grease an rectangle shaped oven proof dish or pan, and line it with wax paper. Grease the wax paper, and set it aside.
  • Beat the 4 eggs in a mixing bowl, until foamy.
  • Gradually add the sugar, and keep on beating, for at least another 5 minutes.
  • Sift together the all purpose flour, baking powder, and the salt.
  • Add into the egg mixture, and blend at a low speed until well mixed.
  • Stir in the vanilla, and pour into the oven dish, or pan.
  • Bake for 20 minutes, at 350 degrees, in a pre-heated oven.

  • Mix all the ingredients of the frosting together, and place in the refrigerator to cool.
  • Lift the cake onto a clean tea towel, sprinkled with confectioners' sugar.
  • Peel away the wax paper.
  • Roll up the cake, and let it cool for 30 minutes.
  • Unroll the cake, and spread with a filling of choice, for example, sifted, sweetened cream cheese, chocolate spread, or vanilla pudding.
  • Re-roll the cake, and spread the pre-made frosting over the log cake.
  • Add a special finish to the log, by scraping the log with a fork, in order to give it the look of "bark."
  • Celebrate, and enjoy the Lincoln log cake on President's Day!
